Hopefully the above link will help someone else. Well done to anyone who sets this up completely from scratch themselves. It is super configurable and certainly not plug and play. I was about ready to send this joystick back the other day but now I've found out a lot about it I'm quite impressed.
Also I added cockpit mode to Shift POV down instead of Escape as I use that quite a lot and if I'm needing to press Escape I can just reach out to the keyboard. I believe this is initially set up via loading and setting the profile first within the LogitecSaitek software, but I haven’t had time to check this out yet. For example I changed Head Toggle and Cargo Scoop on T3 so I don't have to use the shift pinky button to get to Cargo Scoop as I use that more than head look. The last time is showed any info was when I used it with FSX, and had the X52 Pro software profile set up for FSX. Obviously these are just a suggestion and can be tweaked by yourself. The X52 has a mode switch so you can have 3 totally different sets of controls depending on what you're doing.
The following github provides both X52 software profile and ED mappings file along with 3x A4 images, one for each mode, Fight, Landing, Driving. The fact that it's all set up right also means every button you press shows the name of the function in game on the little display on the throttle too which is really nice. It uses a combination of the Logitech software, windows control panel and ED key mappings to get the most out of this joystick and I quite like it. This is the best my research has come up with for using the X52 Pro in Elite.
